Whipped Fish Roe, Soft Brioche.
Pacific Oyster, pickled cucumber dressing.
Kombu cured reef fish.
Fermented green chilli, yuzu buttermilk dressing and pickled apple.
Cloudy Bay Te Koko
Petuna Ocean trout,
Wasabi beurre blanc , horseradish cream, marinated cucumber
Mix leaf salad.
Dry Aged Yellowfin Tuna, parsnip puree, Shellfish Jus.
Duct fat potato, truffle aioli.

Tasmanian Abalone, pumpkin puree, chicken jus.
Bbq King prawn, Herb butter.
